Basic understanding of thermocouple for coffee roasting: 

Thermocouples are a common sensors used to measure and control temperature. They convert units of heat into engineering units that give an input signals for process controllers and recorders.

Thermocouples consists of a welded junction between two dissimilar metals, often wires. Heating the 'hot side' junction in the process environment produces a temperature gradient that generates an Electromotive Force (EMF). The EMF appears across the free ends of the thermocouple wires where it is measured and converted into units of heat calibration. 

Basic understanding of RTD for coffee roasting: 

RTD (Resistance Temperature Detector) sensor includes a sensing element, normally made of high grade pure metal, housed within a protective sheath probe. Sensors are connected to control equipment by insulated lead wires. The relationship between resistance and temperature is stable and consistent for the metals employed in RTD sensors, measuring the resistance across the sensing element at any given temperature allows that temperature to be calculated with a high degree of accuracy.
